Global Knives | Bunmei

Since 1954, the Japanese knife manufacturer Yoshikin has been producing kitchen knives of the GLOBAL brand of the highest quality. GLOBAL knives are still handcrafted in Niigata and are now sold in over 65 countries worldwide. The collection “Bunmei” is presented in the characteristic Japanese style – from the selection of knife shapes to the design. Some of these knives are – typical for Japanese blades – sharpened on one side only. The handle of the Bunmei knives is made of honoki wood, the wood of the Japanese magnolia.

Handle made of Honoki Magnolia

As already mentioned, the Bunmei knives feature handles made of honoki wood. Honoki is a light Japanese magnolia wood with a fine grain and quite resistant, provided it is properly cared for. The handles are symmetrically shaped for European blade variants, and mostly chestnut-shaped for Asian variants. We have listed the exact shape of the handle for each knife. The ferrule (transition between blade and handle) is made of black plastic.

Japanese & European blade variants

The GLOBAL Bunmei collection mostly offers Japanese blade shapes such as the Santoku, Yanagiba & Tako filleting knife, Nakiri & Usuba vegetable knife, and Deba cleaver. In addition, there is also a European chef's knife and two smaller preparation knives. In total, the Bunmei series offers 20 different knives.

Some of the knives, like the Usuba, Yanagiba, Tako, and Deba, are single-edged for right-handed use. All other knives have a symmetrical edge and are suitable for both right- and left-handed users.
