Induction suitable thanks to a ferromagnetic base

Copper is not magnetic, so an induction stove does not recognize pots and pans and refuses to work. The solution to this problem is a ferromagnetic stainless steel plate that is connected to the base of the Prima Matera series. During production, a very thin part of the base is milled out. Then, the base plate is firmly welded to the body with heat and immense pressure. What sounds so simple here is a technical masterpiece that only true specialists in metal processing can achieve in this form.

Induction-compatible cookware can also be used on all other types of stoves. So, if you have a gas stove, ceramic hob, or conventional cast iron plates, you can also cook on them without any problems with the de Buyer Prima Matera series.

Body made of 90% copper and 10% stainless steel

The legendary reputation of copper cookware is based on the conductivity of the material. Copper distributes heat quickly and evenly, up to the upper edge. The heat supply comes not only from the base but also from the side walls. In addition, copper can be controlled precisely. An increase or decrease in heat is transmitted directly to the interior. This is important for complex cooking processes. Especially in high pastry, where small deviations can decide between success and failure.

To prevent a reaction of copper with food, the 2 mm thick walls of the Prima Matera series are equipped with stainless steel on the inside. This also makes cleaning easier and meets all hygiene requirements. If you occasionally cook or simmer something in the oven, you no longer need to transfer, repack, or do anything else. The de Buyer Prima Matera series is absolutely heat-resistant and oven-safe.

Polished edge for drip-free pouring

In the Prima Matera series, you won't find a pouring rim, but the upper edge is sharply polished so that, with a little practice, liquids can be poured without dripping. For example, if you tilt a saucepan very slowly, you will notice that the sauce inside first collects at the edge and only flows over the edge when tilted further.

Two handle options to choose from

The de Buyer Prima Matera series includes two options. The body of the pots, sauté pans, and frying pans is always identical, but the difference lies in the handle options. You can choose between handles made of cast iron or stainless steel casting.

Cast iron handles and copper are classics. Visually, this mixture is an absolute eye-catcher. The only small drawback of cast iron handles is that they transfer heat more and therefore heat up more. Cast iron is simply one of the better heat conductors. Depending on the cooking time and temperature, you can only grip the handle at the back end for the stick handles. Unfortunately, a towel or oven mitts will almost always be necessary for the loop handles. If you want beauty, you have to suffer a little at this point.

Eager readers of Butch's descriptions already know that stainless steel casting, on the other hand, is a very poor heat conductor, making it an optimal choice for handle material. Even during longer cooking processes, the ergonomically shaped stick handles, for example, only heat up in direct proximity to the body. The recessed de Buyer logo also prevents the heat from transferring too strongly to the stick handles. Handle grooves on the underside show you how far forward you can grip the handle. The loop handles made of stainless steel casting do not remain completely cool, but in our opinion, they are always accessible enough to move the pots, transfer the contents, or pour them out without any problems.

Whether cast iron or stainless steel casting handles: all handles are always firmly riveted to the body.

Stainless steel or copper lids

Depending on the handle material, there are matching lids made entirely of stainless steel or the well-known copper/stainless steel mix. The stainless steel lids are equipped with a centrally located recess. This recess serves two purposes. On the one hand, there is enough distance between the handle and the hot lid to protect against scalding. On the other hand, condensation water collects on the curvature in the pot and is quickly directed back into the interior of the pot. This reduces evaporation of liquid. This can even be supported by water or ice cubes on the lid.

The copper lids are beautiful and equipped with cast iron handles. Here too, you can place water or ice cubes on the lid to achieve better condensation water return. To make cleaning easier, the interior is also made of stainless steel. As with the handle grips, we have to honestly tell you that the handles of the copper lids can get quite hot under certain circumstances.

Usage & Care Instructions

To ensure that you enjoy the Prima Matera series for a long time, we would like to give you a few usage and care instructions:
- Never heat the cookware empty. Overheating could damage the cookware in various ways.
- Use moderate settings for frying, sweating, and similar. The cookware heats up extremely quickly and high temperatures are reached just as quickly. Please first get a feel for the heat development. This will save you burnt food and prevent overheating.
- Use the turbo or booster function on induction cookers only to heat larger amounts of liquid. This function is intended for this purpose, but not for other cooking processes.
- Add salt only after the water has already heated up and stir well. Otherwise, the salt will burn onto the bottom and white spots or even corrosion can form. This does not affect the cooking properties, but it does not look nice.

Large selection variety

The Prima Matera series offers a fairly large selection. There are four frying pots in different sizes, five saucepans from very small to very large, and also four flat roasting pans in different sizes. For stews or soups, you will find two high cooking pots, and for braising and sautéing, we recommend one of the five sauté pans. Two of them are in a conical shape. The four pans are of course intended for sharp frying. And fans of Asian cuisine will surely find the impressive wok appealing. So you shouldn't miss anything. The range with stainless steel cast handles is slightly larger than that with cast iron handles.

Prima Matera - a masterpiece
