Induction-compatible due to a ferromagnetic base

Copper is not magnetic, so an induction stove does not recognize pots and pans and refuses to work. The solution to this problem is a ferromagnetic stainless steel plate that is bonded to the base of the Prima Matera series. During manufacturing, a very thin part of the base is milled out. Then, under heat and immense pressure, the base plate is firmly welded to the body. What sounds so simple here is a technical masterpiece that only true specialists in metal processing can achieve in this form.

Induction-compatible cookware can always be used on all other types of stoves. So if you have a gas stove, ceramic hob, or conventional cast iron plates, you can also cook on them without any problems with the de Buyer Prima Matera series.

Body made of 90% copper and 10% stainless steel

The legendary reputation of copper cookware is based on the conductivity of the material. Copper distributes heat quickly and evenly, right up to the top edge. The heat supply comes not only from the base but also from the side walls. In addition, copper can be precisely controlled. An increase or decrease in heat is directly transferred to the interior. This is important for complex cooking processes, especially in high patisserie, where even small deviations can determine success or failure.

To prevent a reaction of the copper with food, the 2 mm thick walls of the Prima Matera series are equipped with stainless steel on the inside. This also makes cleaning easier and meets all hygiene requirements. If you occasionally cook or let something simmer in the oven, you no longer need to transfer, repack, or whatever. Ground edge for drip-free pouring

In the Prima Matera series, you will search in vain for a pouring rim. However, the upper edge is sharply ground so that—with just a little practice—liquids can be poured out without dripping. For example, if you slowly tilt a saucepan, you will notice that the contained sauce first collects at the edge and only flows over the edge with further tilting.

Two handle variants available

The de Buyer Prima Matera series includes two variants. The body of the pots, sauté pans, and frying pans is always identical; the difference lies in the handle variants. You have the choice between handles made of cast iron or stainless steel cast.

Cast iron handles and copper are classics. Visually, this mixture is an absolute eye-catcher. A small drawback of cast iron handles, however, is that they transfer heat more and therefore heat up more. Cast iron is one of the better heat conductors. Depending on the cooking time and temperature, you can only grip the stick handles at the rear end. Unfortunately, a towel or oven mitts are almost always necessary for the loop handles. Those who want beauty must suffer a little at this point.

Eager readers of Butch descriptions already know that stainless steel cast, on the other hand, is a very poor heat conductor, but is therefore an optimal choice as a handle material. Even during longer cooking processes, the ergonomically shaped stick handles, for example, only heat up in direct proximity to the body. The milled-out de Buyer logo additionally prevents the heat from transferring too much to the stick handles. Grip recesses on the underside show you how far forward you can grip the handle. Although the loop handles made of stainless steel cast do not stay completely cool, in our opinion, they are always graspable enough to move the pots without problems, transfer the contents, or pour them out.

Regardless of whether cast iron or stainless steel cast handles: all handles are always firmly riveted to the body.

Lids made of stainless steel or copper

Depending on the handle material, there are matching lids made entirely of stainless steel or from the well-known copper/stainless steel mix. The stainless steel lids are equipped with a centrally arranged recess. This recess has two functions. On the one hand, there is enough distance between the handle and the hot lid as protection against scalding. On the other hand, the condensation water collects on the bulge in the pot and is quickly redirected back into the pot interior. This reduces the evaporation of liquid. This can even be supported by placing water or ice cubes on the lid.

The copper lids are beautiful and equipped with cast iron handles. Here, too, you can place water or ice cubes on the lid to achieve better condensation water return. To make cleaning easier, the interior is also made of stainless steel. As with the loop handles, we must honestly tell you at this point that the handles of the copper lids can become quite hot under certain circumstances.

Usage & care instructions

To ensure you enjoy the Prima Matera series for a long time, we would like to give you a few usage & care instructions:
- Never heat the cookware empty. Overheating could damage the cookware in various ways.
- Use moderate settings for frying, sautéing, and similar. The cookware heats up immensely quickly, and high temperatures are reached just as quickly. Please first get used to the heat development. This will save you from burnt food and prevent overheating.
- Use the turbo or booster function on induction stoves only for heating larger quantities of liquid. This function is intended for this purpose, but not for other cooking processes.
- Add salt only when the water has already warmed up and stir well. Otherwise, the salt will burn into the base, and white spots or even corrosion may occur. Although this does not affect the cooking properties, it does not look nice either.

Wide range of products

The Prima Matera series offers a fairly large selection. There are four roasting pots in different sizes, five saucepans from very small to very large, and also four shallow roasters in different sizes. For stews or soups, you will find two high pots; for braising and sautéing, we recommend one of the five sauté pans. Two of them are conical in shape. The four pans are, of course, intended for searing. And fans of Asian cuisine will surely enjoy the impressive wok. So you should not miss anything. The range with stainless steel cast handles is somewhat larger than the one with cast iron handles.
