Iron pans, the mother of all pans, have high and even heat conductivity and are versatile. They also promise very long durability, as they are almost indestructible. And if iron pans ever develop rust or the like, they can be restored with a little effort.
To enjoy your de Buyer iron pans, there are a few small things to consider. You can find this information in the de Buyer brochure All You Need to Know About Carbon Steel and in our de Buyer Mineral B Iron Pans Catalog. There, we also show the complete range.
Iron pans require some preparation before the first use, as iron reacts with food and is prone to rusting. You can prevent this by a process called seasoning. This involves heating oil in the pan, which seals the surface. The adjacent video by the manufacturer de Buyer shows how you can easily and simply do the seasoning at home.
Another advantage of seasoning is the patina that forms on the surface. With increasing use, this acts like a non-stick coating and reduces sticking. The non-stick properties of the patina, although not comparable to plastic-based non-stick coatings, are completely natural.
