de Buyer Choc Non-Stick Coatings

Pans, sauté pans, and pots with PTFE-based non-stick coatings. Suitable for all types of stoves, including induction.

Choc – this collection name stands for professional cookware made of aluminum with a non-stick coating by de Buyer, our top French brand manufacturer. At Butch Shop, we offer these four series from the Choc collection:

Our advice: Butch generally recommends using kitchen utensils made of plastic or wood when handling non-stick cookware. However, even these materials can cause scratches if used at a steep angle or with a lot of pressure. Therefore, some caution is advised even when using these tools. And while we're on the subject: Small scratches are almost unavoidable and do not pose a problem, even in cookware with a non-stick coating. However, if the coating starts to bubble or peel off in places, the pan should be discarded, and you should treat yourself to a new one.

Choc Resto Induction

Material | The Choc Resto Induction series includes pans made of 4-5 mm thick aluminum in various sizes. These pans are equipped with a PTFE-based non-stick coating. This coating reliably ensures that no food sticks to the pan. Please use only plastic or wooden spatulas and kitchen utensils, as sharp objects like forks or metal utensils can damage the coating and significantly reduce the lifespan of your pan.
The exterior of the Choc Resto Induction pans is untreated and consists only of polished aluminum. This surface is scratch-sensitive and prone to crusting, which, however, only affects the appearance, not the functionality.

Handle | The handle is made of strip steel. It is firmly riveted to the pan body. This handle only heats up near the pan – at the end of the handle, it usually remains easy to grip.

Temperature | Non-stick pans should never be heated empty, so add cooking fat or food to the pan in time. The Choc Resto Induction series heats up quite quickly, is suitable for high temperatures, and is heat-resistant up to 260 °C. You can briefly place the pans in the oven at a maximum of 200 °C to keep a dish warm, for example.

Stovetops | Each pan has a magnetic base plate to allow use on induction stoves.

Cleaning & Care | Please clean the Choc Resto Induction pans gently by hand wash. They will reward you with a long lifespan.*

Choc Intense

Material | The Choc Intense collection is made from 4 mm thick forged aluminum and includes pans, sauté pans, and crepe pans in different sizes. The forging process makes aluminum harder and more durable. A thick, reinforced PTFE-based non-stick layer ensures excellent frying properties and has high abrasion resistance. However, this non-stick coating is also sensitive to scratches and mechanical stress, so the manufacturer and we recommend careful use of kitchen utensils made of wood or plastic. The Choc Intense range has a matte black exterior coating that protects the aluminum from external influences.

Handle | Choc Intense items feature a flat stainless steel handle. This handle only heats up near the pan body. At the flat end piece, the handle usually remains easy to grip.

Temperature | The Choc Intense series heats up quickly, is very controllable, and is suitable for high temperatures. The pans are even oven-safe up to 250 °C. Please do not heat empty – non-stick pans do not tolerate that at all!

Stovetops | The magnetic base plate allows this cookware to be used on induction stoves.

Cleaning & Care | The manufacturer allows occasional cleaning in the dishwasher, but we at Butch strongly advise gently washing the high-quality Choc Intense items by hand. This is a key factor for their longevity.*

Choc B Bois

Material | In the Choc B Bois series, you will find pans, crepe pans, and sauté pans in various sizes. This cookware is made of 4 mm thick forged aluminum. The forging process makes aluminum harder and more durable. The reinforced PTFE-based non-stick layer ensures excellent frying properties and scores with high abrasion resistance. However, any non-stick coating is sensitive to mechanical influences, so both de Buyer and Butch recommend using kitchen utensils made of plastic or wood. The Choc B Bois items have a matte black exterior coating that protects the aluminum from external influences.

Handle | The name says it all: "Bois" is French and means "wood". The strip steel handles of the Choc B Bois range are riveted with solid beech wood handle shells. These handles are comfortable to hold, and the wood also serves as a temperature shield.

Temperature | Choc B Bois pans heat up quickly, are very controllable, and are suitable for high temperatures. However, due to the wooden handles, the Choc B Bois pans should only be placed in the oven briefly and at a maximum of 200 °C. Please do not heat pans with non-stick coating empty, as this could damage the surface layer.

Stovetops | The magnetic base plate allows use on induction stoves.

Cleaning & Care | The Choc B Bois range is NOT dishwasher safe due to its real wood handles.*

Choc Extreme

The Choc Extreme range is the premium class within the Choc collections from de Buyer. For us at Butch, it's cookware with a real WOW effect! The Choc Extreme series includes pans, sauté pans, pots, a saucepan, and a wok.

Material | Choc Extreme is made of 7 mm thick die-cast aluminum. This high material thickness guarantees absolute deformation resistance. The reinforced non-stick coating of this series is also based on PTFE and is extremely hard. With proper treatment, this means a very long lifespan. Even at the risk of repeating ourselves: You can greatly influence the longevity of high-quality non-stick pans yourself: Avoid sharp-edged spatulas, do not heat the pans empty, and clean them gently by hand!

Handle | In the Choc Extreme series, we distinguish between handle grips and loop handles:
The handle grips are firmly riveted to the body and made of solid stainless steel casting. Since stainless steel casting is the worst possible heat conductor, this material is ideal for handles. Together with the handle construction, it prevents the handle grips from heating up.
Some items like pots, sauté pans, and the wok are equipped with space-saving loop handles. Here, the body and handle are made from one piece – making them extremely stable and almost indestructible. However, the one-piece construction means that these handles can become warm or hot. Especially during longer cooking, please use pot holders or gloves to handle the grips.

Temperature | The Choc Extreme collection is oven-safe up to 250 °C. Heating occurs somewhat slower compared to the other Choc series due to the high material thickness. However, this series reaches higher temperatures. Once brought to temperature with food in it, you can safely reduce the energy supply – the temperature will still be maintained.

Stovetops | Of course, this Choc range is also equipped with a magnetic base plate and suitable for induction stoves.

Cleaning & Care | The manufacturer declares the Choc Extreme items as dishwasher safe. We at Butch recommend gently washing this premium cookware by hand. In our experience, this further extends their longevity. Because let's be honest: Cleaning a non-stick pan by hand takes a maximum of 60 seconds, including drying. The reward for this minimal effort is the maximum lifespan of your Choc Extreme treasures.*

(* We would like to point out once again: Butch assumes no product liability for cookware that we have declared as not dishwasher safe and was still cleaned in the dishwasher.)
