The Janus Slicer with a 16 cm long blade made from a special steel, coated with a Diamond-Like-Carbon Coating (DLC), is a filleting knife of the highest class. The steel alloy of the blade includes the rare element niobium. This high niobium content achieves the finest possible steel structure despite rust resistance, resulting in extremely high strength, durability, and edge retention. Additionally, the blade is coated with a few micrometers thick, yet extremely hard DLC coating. This matte black carbon layer is resistant to acids, high temperatures, and extremely scratch-resistant. A great side effect: The blade glides more easily through the cutting material because the coating has very low friction values. The DLC coating, the hardness of approximately 60 HRC, the flat grind, and the narrow, slightly flexible blade make the slicer a truly perfect knife for filleting, trimming, filleting, and cutting wafer-thin slices.
The massive and seamless handle in this variant is made from the high-tech plastic Micarta in red-black. This plastic is impact-resistant, hard, and shatterproof, as well as extremely resistant to moisture, acids, and alkalis. Therefore, Micarta is often chosen by professional chefs as a handle material. The transition between the blade and handle is adorned with a ferrule made of matte brushed stainless steel.
The Janus Slicer is delivered in a high-quality matte black box with the Nesmuk authenticity certificate.
