Details

The Janus chef's knife has an 18 cm long blade made of a special steel coated with a Diamond-Like-Carbon (DLC) coating. On the one hand, the steel alloy of the blade contains a high proportion of the rare element niobium. Niobium achieves the finest possible steel structure despite rust resistance and results in extremely high strength, durability, and cutting ability. In addition, the blade is coated with a few micrometers thick but extremely hard DLC coating. This matte black carbon layer is resistant to acids, high temperatures, and extremely scratch-resistant. A great side effect: the blade glides more easily through the cutting material because the coating has very low friction values. The combination of DLC coating, approximately 60 HRC hardness, one-sided hollow grind, and the slightly curved blade shape make the lightweight chef's knife an incomparable cutting tool in this class.

The massive and seamless handle in this variant is made of Karelian masur birch, a birch species native to Northern Europe. The light gray to light brown wood shows a strong, contrasting, and distinctive grain that arises from the slow growth. Karelian masur birch is a typical handle material for Scandinavian knives. The transition between the blade and handle is adorned with a ferrule made of brushed stainless steel.
