Traditionally, Kiritsuke knives are sharpened on one side and are used for filleting. Similarly, it is often also used as a vegetable knife. The Kiritsuke knives from the KAI Kaname Series, on the other hand, are sharpened on both sides, thus symmetrically. As a result, these knives, similar to chef's knives or Santoku, can be used universally for cutting and filleting fish, meat, vegetables, and fruit.
