Small Santoku knife with an 11 cm blade length made of Cromova 18 steel.

Global knives by Yoshikin from Japan are among the top 3 knife manufacturers for professional chefs worldwide. The hard and extremely sharp blades made of Cromova 18 steel with a hardness of (+/-1) 59 HRC are perfectly tailored to the daily work of professional chefs. The hand-sharpened edges have a high service life, are (with the right sharpening tool) easy to sharpen and resistant. In addition, the knives can be guided precisely, are optimally balanced, not too heavy and also meet the strictest hygiene regulations. With almost 100 different knives, which differ in blade shape, blade length and weight, almost every wish and preference can be fulfilled.  

Global knives are divided into four categories:
The G Series includes knives from 16 cm blade length with stamped blades, fine knife back and a steel handle filled with sand.
In the GS Series, you will find knives up to 16 cm blade length, also with a stamped blade, fine knife back and the steel handle filled with sand.
The GF Series is for fans of heavier knives. The hand-forged blades (F) have a wider knife back and also the steel handle filled with sand.
Blades of the GSF Series are up to 16 cm long, forged and have a fine knife back with the proven, sand-filled steel handle.
In addition, there is a wide selection of items for knife storage, sharpening tools and accessories such as peelers, palettes and tweezers.
